Salt & Vinegar Roasted Potatoes

Method
- Steam new potatoes until tender (20-30 mins). When cooked drain and let dry.
- Preheat Oven to 220 Celsius, pour oil in shallow roasting tin and heat for 5 mins.
- Place potatoes in roasting tin and crush with a fork (a little squish, not too much). You want them to have rough edges which will crisp and brown up better in the oven.
- Roast for 20 mins, turn them and roast another 10 mins.
- Sprinkle with salt and vinegar. Add more accordingly to taste!
- Tuck in!
